One such system is the HACCP (Hazard Analysis Critical Control Point) system. The
objective of the present work is to implement this approach in the refined sugar production
line. For this purpose, the 12 steps of the HACCP were successively applied. In our work,
which concerns the implementation of the HACCP system on the production of refined white
sugar, the analysis of the three types of hazards (biological, physical, chemical) was carried
out.
