
Heat a large, oven-safe skillet (cast iron works best) over medium-high heat. Add your oil or
butter, then add the sausage. Cook for 4–6 minutes, turning occasionally, until browned on all
sides. Don't rush this step; the caramelization builds the foundational flavor of your one pan
sausage and egg breakfast.
If you're using loose/crumbled sausage, break it apart with a wooden spoon as it cooks.
Step 3: Sauté the Vegetables
Push the sausage to the sides of the pan and add your onion and bell pepper to the center.
Sauté for 3–4 minutes until softened. Add the garlic and cook for another 60 seconds until
fragrant. Stir everything together with the sausage.
Step 4: Add the Tomatoes and Seasoning
Toss in the cherry tomatoes, smoked paprika, chili flakes, salt, and pepper. Stir to combine and
cook for 2 minutes until the tomatoes begin to soften and release their juices. This creates a
light, flavorful sauce that will partially cook your eggs.
Step 5: Create Wells and Add the Eggs
Use a spoon to create small wells or pockets in the sausage mixture. Gently crack one egg into
each well. Reduce the heat to medium-low. For sunny-side-up eggs, cover the pan with a lid
and cook for 3–5 minutes until the whites are set but the yolks are still runny. For fully cooked
yolks, cook for 6–8 minutes covered.
Pro Tip: If you prefer your one pan sausage and egg breakfast with scrambled eggs instead,
whisk the eggs together and pour them over the mixture, stirring gently as they cook.
Step 6: Finish and Serve
Remove from heat, scatter fresh herbs and any cheese on top, and serve directly from the pan.
Pair with crusty bread, toast, or flatbread for a complete breakfast.
